Celiac disease is a genetic disorder that affects at least 1 in 133 Americans. Symptoms of celiac disease can range from the classic features, such as diarrhea, weight loss, and malnutrition, to latent symptoms such as isolated nutrient deficiencies but no gastrointestinal symptoms. In our family, my son has been diagnosed celiac, I am highly suspected celiac, and my 2 daughters are classified as gluten intolerent--which is really only semantics. None of us can eat wheat.
One daughter also can't eat dairy and has several food allergies. Throw in the extended family--and cooking gets really interesting!
It's been a long journey from illness to better health, one I never expected to make! Five years ago I'd barely heard of celiac disease, and I'm not sure I knew what gluten was--it's been a long road. I hope you'll join us in our travels!
